Best Vegan Chef Salad

I am the Salad Queen!!  Salad is my comfort food — I have one very day.  Most people don’t think this is possible until they taste my Best Vegan Chef Salad!

I don’t mean to brag, but after making the hundreds of salads I have made over the years you begin to figure out which veggies work best in what healthy combination.  After many requests, I finally put together my Best Vegan Chef Salad guide together and will share it here:

Best Vegan Chef Salad

Add one or more of the following greens as your salad base:

  • Salad Greens Mix (I like the Baby Spring Mix best)
  • Baby Spinach
  • Green or Purple Cabbage
  • Baby Bok Choy
  • Kale and/or Collards (small amounts only)

Add one or more of the following chopped fresh herbs:

  • Cilantro (my favorite)
  • Parsleys
  • Basil
  • Green onions

 Add one or more of the following chopped fresh veggies (sometimes I add all of them!):

  • Cauliflower
  • Broccoli heads
  • Zucchini or Summer Squash
  • Mushrooms

 Add one of the following chopped starchy veggies:Best Vegan Chef Salad

  • Carrots
  • Beets
  • Corn

 Add one of the following oil laden veggies:

  • Olives
  • Avocados

 Add one of the following seeds:

  • Pumpkin seeds (this is my favorite)
  • Sesame seeds
  • Flax seed

Add one of the following fruits:

  • Raisins (often this is the secret ingredient that makes the salad special!)
  • Dried cranberries
  • Apples
  • Mandarin orange sections

Add one or more of the following proteins:

  • Fresh sprouts (almost always add these to my salads)
  • Nuts
  • Cooked lentils or beans
  • Vegan cheese

Add your favorite tomatoes (salad is not complete without tomatoes!)
