Potato Leek Soup

Potato Leek Soup is one of my favorite soups!  Potato makes a wonderful soup base and leeks give it such a great flavor!  This particular recipe is from my favorite fellow blogger:  Megan from The Gluten Free Vegan.  She makes her Potato Leek Soup a bit different than I do, but this recipe sounds delicious as well.

Creamy Potato & Leek Soup

Ingredients
  • 2 tablespoons vegan margarine
  • 2 large leeks, sliced in half lengthwise, washed well, both white and green parts sliced thinly
  • 2 – 3 potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1/4 cup full-fat coconut milk
  • Fresh ground black pepper
  • Salt, to taste

When I makes my Potato Leek Soup,  I add chopped celery and carrots.  I especially like the taste and color that the carrots add to the soup.  I don’t add milk or cream to my soup.  Instead, I wait until the soup is fully cooked and scoop about half of it into my Vitamix and blend until smooth.  I add the blended soup back in the pot with the rest, adjust the seasoning and serve.  I guess you could call it a lumpy creamed soup!!
