Carob Brownies with Mint Frosting

Carob Brownies with Mint Frosting sounds like a perfectly healthy Gluten Free Vegan dessert.  Of course, you know that brownies are my favorite — but check out the secret ingredient in this recipe.  It is amazing!!

Recipe: Mint Carob Walnut Brownies

Brownie Ingredients:

2 c cooked, mashed sweet potato (about 2 sweet potatoes)
2 c + 4 T carob powder
1 c oat flour
10 T date paste*
1 T flax
3 T nondairy milk
1 t vanilla
1/2 t cinnamon
1 t baking powder
1/2 t baking soda
1/2 c walnuts toasted and chopped after measuring (optional)

Brownie Preparation:

Preheat your oven to 350 F.
Mix the flax in a small bowl with the nondairy milk and let it thicken.
In a large bowl, place the mashed sweet potato, date paste and vanilla and mix to incorporate.
In a separate bowl mix the remaining dry ingredients
Poor the dry ingredients and flax mixture into the wet ingredients and incorporate. The batter should be very thick and rather dry like a yeasted bread dough or fudge. If it is too wet, add more oat flour.
Taste test your dough and make sure it is sweet enough and has enough carob for your taste.
Lightly oil a 9×9 brownie pan and press dough into pan.
Bake at 350 F for 35-40 minutes or until the brownies have cracked on top. Let cool and frost with mint icing!

Sweet Potato Recipes

Imagine a cookbook filled with nothing but Gluten Free Vegan Sweet Potato Recipes …. Sounds interesting?  Well, Brooke Guthrie, has created a wonderful recipe book filled with nothing but … you guessed it:  Sweet Potato Recipes!

Affectionately referred to as Eco Chef Love, she said, because everything she does is “out of love for the planet.”, Guthrie, grew up in the south where sweet potatoes are a common vegetable.

‘Sweet Potato Momma’

Her new cookbook, “Sweet Potato Mama,” is a thin paperback that touts the healthier side of cooking in about 30 recipes that are vegetarian and gluten-free.

The book is just one of the many food projects Guthrie has tackled over the years. She teaches cooking classes. And she has tried catering. At one point, she contemplated opening a coffee shop, and she also studied to be a chocolatier.

This book focuses on one of her favorite vegetables. …

…Guthrie points out that the Center for Science in the Public Interest ranked the sweet potato as the most nutritious vegetable. It is high in fiber, iron, calcium, vitamins A, B2 and C and other nutrients.
