The 27-year-old was raised vegetarian and went vegan a few years ago. In the process, she created numerous recipes. One of those is for quinoa stuffed mushrooms, which she whips up here. The veggieburger is on the menu at Copper Dog.

Quinoa Stuffed Mushrooms

2 portabello stuffed mushroom caps, stems removed

1 cup artichoke hearts, quartered

1/2 cup black olives, sliced

3 garlic cloves

2 tablespoons Italian seasoning

1 teaspoon sea salt

1/2 teaspoon white pepper

1 cup quinoa

2 cups of water

3 to 4 tablespoons olive oil

2 cups pasta sauce

Fresh basil leaves
