Cabbage Apple Slaw
I love this time of the year when produce is plentiful and I can experiment with new combinations.
I recently came up with this new recipe for cabbage apple slaw. Maybe it doesn’t look like much, but it was really good. It received great reviews at our church potluck yesterday!
Ingredients
- 2 cups grated apple
- 2 cups grated purple cabbage
- 1/2 cup grated celery
- 1/2 cup chopped pecans
- 1/2 cup raisins
- 1/2 cup coconut
- 1/2+ cup Vegenaize
- 2-3 Tablespoons water
Instructions
- Toss all ingredients together in a dish
- Add Vegenaize and mix well.
- Add water to thin dressing, if needed

Fresh Beet Salad
If you are wanting to add more beets in your diet, this beet salad recipe works perfectly.
Personally, fresh beets are just too ‘earthy’ for me to eat plain! Pickled beets are pretty good, but that means eating lots of extra sugar that I would rather avoid.
So, I developed this recipe that is just the right amount of natural sweetness to mask the ‘earthy’ beet taste!
Ingredients
- 2-3 medium sized fresh beets
- 2 medium sized carrots
- 1/4+ head of cauliflower
- 1/2 can of pineapple
- 1/3 cup raisins
- 1/3 cup pumpkin seeds
- 2+ Tablespoons of Vegenaise
Instructions
- Grind all the veggies into small pieces.
- Toss together in medium to large bowl. Add enough juice from the pineapple to sweeten the salad to your liking.
- Add a couple tablespoons of vegenaise to achieve the creaminess of your choice.
I have also made this recipe using left over zucchini in addition to the other ingredients — and it turned out equally as good!
Spring Veggie Salad
Raw salads are the best way to eat veggies, so, today, I am sharing of my favorite raw salads: Spring Veggie Salad. One of the reasons I like it so much is because you can alter it based on the veggies you have on hand at the time. Or you can add or subtract any of your favorite (or not so favorite) vegetables. Could probably also call this the End of the Summer Veggies Salad!!
The recipe below lists the veggies I used — because that is what I had in my refrigerator at the time.
Ingredients
- 1 cup broccoli, cut into small pieces
- 1 cup asparagus, cut into pieces
- 1 cup sugar snap peas, cut in half
- 3/4 cup mushrooms, sliced
- 1 cup zucchini, sliced and cut in half
- 3/4 cup carrots, sliced
- 1 large tomato, cut into small chunks
- 3/4 cup raw pumpkin seeds
- 3/4 cup gourmet Italian (or apple cider) vinegar
- 3/4 cup olive oil
- 3/4 cup Xylitol (or your favorite sweetener)
Instructions
- Chop all the veggies and place in a large bowl with a tight fitting lid.
- Mix vinegar, oil and sugar into a microwavable bowl, and microwave for 2-3 minutes until all the sugar is dissolved. Allow dressing to cool.
- Mix dressing into bowl of veggies, seal the bowl and gently shake the bowl to mix the dressing into the veggies.
- You can serve at once or allow to marinade in the refrigerator to mix the flavors.
Quantities of the veggies can be altered according to your tastes or veggies you have on hand.
I took this salad to a church potluck and it was a huge hit (actually, I was hoping to have some leftovers to take home, but they finished it off!!).

- Green onions
- Cauliflower
- Celery
- Green or wax beans
- Kohlrobi
- Beets
- Summer squash
- Peas
- Radishes
- Baby corn
- Artichoke hearts

Fresh Cuke Tomato Salad
I am a big fan of Dr. Josh Axe — he has good tips and good recipes. Although he does not say he is Gluten Free or Vegan, he posts some wonderful recipes like the Fresh Cuke Tomato Salad I am posting today.
There are LOTS of ways to create some delicious Fresh Salads. Sometimes, it is just as easy as chopping up whatever veggies you have in the fridge and serving. Other times, it is nice to have a recipe to start with … and add your own variations from there.
Simple is the key, which is why I like the Dr. Axe recipe below:
Ingredients
- 1 medium cucumber, diced
- 2 medium tomatoes, diced
- 1 small bunch of cilantro, chopped
- 1 tbsp vegenaise
- 1 small handful raisins (optional)
Instructions
- Mix all ingredients and serve cold
Like I said, SIMPLE!
