Allergy Free Chewy Carob Chip Cookies

Gluten-free + Vegan Chewy Carob Chip Cookies
Yield: 24 cookies

IngredientsDry
1/2 cup sorghum flour
1/2 cup arrowroot starch
1/2 cup sweet rice flour
1 tbsp freshly ground flax seed
1 tsp gluten-free baking powder
1/4 tsp Himalayan rock saltWet
1/2 cup + 2 tbsp coconut oil, at room temperature
3/4 cup palm sugar
2 tbsp date syrup or unpasteurized honey *see note
1 flax egg – 1 tbsp freshly ground flax seed and 3 tbsp warm water
1 tsp pure vanilla extract
We use coconut sugar for many of our recipes calling for sugar because it has such a low glycemic index. I would think you could use it in place of palm sugar, if you would like. Here is a link where you can buy coconut sugar:
