Caesar Salad with Gluten Free Dressing

I am the Salad Queen …. but I have not tried Caesar Salad with Gluten Free Dressing!  Oh, and did I mention that it is Vegan as well!!

Finding good Gluten Free Vegan Salads has never been much of a problem.  Just check out your vegetable bin — cut  up a little of this and a little of that — and you have yourself a start for a good salad!  But the dressing …. that is another story.  Ranch Dressing fans have a real challenge trying to find something Gluten Free and Vegan.

This dressing is incredibly interesting!  Of course, I would probably use coconut or hazelnut milk (allergic to almonds *sigh*).  But the pumpkin was a surprise!!  My husband would probably love this one because he is a huge pumpkin fan.

 

Gluten-Free and Vegan Caesar Salad

Caesar Salad with Gluten Free Dressing1 cup Brussels sprouts
4 cups mixed greens (spinach, radicchio, etc)
1/2 cup arugula
3/4 cup almond milk
1/2 cup pumpkin
1/4 cup cashews, ground
1 ripe avocado, pitted and peeled
2 Tbsp. nutritional yeast
1/4 tsp. fresh lemon juice
1 Tbsp. agave nectar
1/6 tsp. curry powder
1/6 tsp. fresh ginger root
1/4 cup fresh basil, finely chopped
Pinch of sea salt

I have developed my own Salad Dressing.  I start with about a cup and a half of Grapeseed Vegenaise (my favorite!).  Then I add the following (measurements are not exact as I don’t measure when I make it!):
  • A couple TBSP of Coconut Aminos
  • A couple TBSP of Olive Oil
  • A couple TBSP of water or coconut milk
  • Favorite seasonings (I use dill and a garlic herb mix)

This fills a pint jar about 3/4 full.  I shake it well and use!!  Oh, and make sure to store in the fridge!
