Candied Almonds (or Nuts)

Candied Nuts — especially Candied Almonds — are fun to make and tastes so much better than those candied nuts you buy in the store!  Sweetened with maple sugar rather than corn syrup or other ‘not so nice’ sugars makes this an especially good treat.

The recipe called for almonds, but I would think you could use any nuts.  Soaking the nuts first is one of the tricks to making these treats so nutritious.

“Raw” Vegan Gluten Free Maple Cinnamon Almonds
Candied Almonds

4 cups raw almonds soaked rinsed (or you can soak them for 12 hours and rinse for better digestion)
1 cup organic maple sugar (crystalized maple syrup)
2 tsp ground cinnamon
1/2 tsp Celtic sea salt

  • Mix together the maple sugar, cinnamon and sea salt.
  • Roll the wet almonds in the mixture until well coated.
  • Lay on trays and place in the dehydrator for about 8 hours until dried.
  • If you soak your almonds you will need to dehydrate for longer – up to 24 hours.
  • If you don’t have a dehydrator, you can use the lowest setting of your oven and heat for about 8 hours.
