Gluten Free Trail Mix Bars

I love trail mix and have missed it over the last years.  So many of the good mixes have sunflower seeds and I am allergic to them.  This Gluten Free (and Vegan) Trail Mix Bar recipe looked really good and no sunflower seeds (although you can add them, if you like).

If you are going to eat cookies, try a this recipe that has good ingredients — not one that is full of empty calories, tons of sugar and bad flours!

Vegan Gluten-Free Trail Mix Cookie Bars

Gluten Free Trail Mix Bars

  • 2 c. oat flour (or gluten-free flour mix of choice)
  • 1 t. baking soda
  • 1 1/2 t. salt
  • 1 c. oats
  • 1 c. dried cranberries, chopped
  • 1 c. sweetened shredded coconut
  • 1 c. dark chocolate chips
  • 1/3 c. + 2 T. sugar
  • 3/4 c. peanut butter
  • 3/4 c. unsweetened applesauce
  • 1/2 t. vanilla extract
  • 1/4 c. plain soymilk (or vegan milk of choice)

Personally, I would use coconut milk.  I try to stay away from soy as it is so questionable for so many gluten intolerance folks!

This is a fun recipe because I can see so many possibilities — based on what I would have in the pantry!  You could sub dried cranberries for the raisins; add nuts rather than coconut; use other nut butters in place of the peanut butter;  used puffed quinoa or rice for the oats ….. I hope you get the idea!  And, of course, I would increase the chocolate chips!!!
