Nut Butter Apple Cookies

This is my kind of cookie!  Nut Butter Apple Cookies sound like a cross between a muffin and a cookie.  I typically have a tough time finding a cookie I really like and can justify eating — even Gluten Free Vegan cookies!  Too many recipes I find are loaded with sugar or other non-nutritious ingredients that I just will not eat!

The author and creator of this recipe, Jonathan Itchon from The Canary Files, confessed that he eats these Nut Butter Cookies for breakfast.

Almond Butter Apple Cookies

Nut Butter Apple Cookies

scant 2/3 c (60g) almond meal/flour
1/3 c (45 g) millet flour
1/3 c (40g) arrowroot starch
1 teaspoon baking powder
1/4 teaspoon salt
1/4 c (30g) quinoa flakes
1 heaping tablespoon (10g) ground flax
2 teaspoons (5g) raw hemp hearts

1/8 c (10-15g) diced dried apple

1 tablespoon (15g) olive oil
2 tablespoons (30g) unsweetened applesauce
2 tablespoons + 1 teaspoon (40g) maple syrup
scant 1/4 c (35g) coconut sugar
scant 1/4 c (45g) almond butter (or any nut butter you prefer)
scant 3 tablespoons (40g) almond milk

1 tablespoon coconut crystals to garnish

The original recipe calls for Almond Butter, but you could probably use any nut butter you would like as there are several different types available.  Personally, I would use Hazelnut Butter and Hazelnut Milk as I am allergic to almonds!

You can also make your special nut butters and nut milks by using the simle procedure below:

NUT MILK

Soak 1 cup of nuts overnight.  Pour off the water in the morning; add nuts, 3 1/2 to 4 cups of water (depending on how thin you want your milk), a teaspoon of vanilla and a tablespoon or so of maple syrup in your blender.  Blend for several minutes until milk is smooth.  You can strain the milk through cheesecloth to eliminate the bits of nut that make the milk tastes gritty.  For this recipe, I would leave them in.

NUT BUTTER

Soak 1 cup of nuts overnight.  Pour off the water in the morning; add nuts and a tablespoon or two of your favorite oil.  Blend well.  If the mixture is too thick, add a bit more oil
