Quinoa Granola Crispy Bars
I love experimenting with recipes I find here and there — that is how I came up with this unique Quinoa Granola Crispy Bars. Actually, I took a chance on trying it out at a church dessert potluck last Sunday. Wasn’t sure how they would turn out, but luckily, I had several complements …. and they were from several folks who are NOT Gluten Free or Vegan!!
I took the original recipe from Made in Alaska and modified it to fit my preferences and my pantry!
No Bake Granola Crispy Treat Bars
Quinoa Granola Crispy Bars
Mix the following ingredients in a large bowl:
1 1/2 cups gluten free rolled oats
1 1/2 cups Organic Quinoa Crispies (puffed quinoa)
1/3 cup organic raisins
1/2 cup mini dairy free dark chocolate chips
1/4 cup finely shredded coconut (unsweetened)
Combine the following in a saucepan over low heat. Cook until well blended — about 5-6 minutes:
1/3 – 1/2 cup Coconut Nectar (depends on how sweet you like it!)
1/2 cup organic peanut butter
1 TBSP coconut oil
1/2 tsp cinnamon
Pour wet ingredients into the bowl of dry ingredients and mix thoroughly. Press into a lightly greased 11 x 7 inch pan and put in the freezer.
I kept my Quinoa Granola Crispy Bars in the freezer overnight and refrigerated them until they were served a noon.
The original recipe calls for rice crispies, but, like I said, I like to experiment. You could also use several different ‘puffed grain’ such as amaranth or millet. Depends on your tastes!
