Raisin Cookie Recipe
Gluten Free Cookie Recipes are lots of fun to me. After spending most of my adult life feeling like I shouldn’t eat cookies because of all the bad things in them — no good nutritional value — now, I feel like I can eat them again. What changed? Well, if you bake a Gluten Free Vegan Raisin Cookie you will surely make a nutritious snack that has lots of nutritious ingredients in it as well!
This particular cookie has cinnamon, oats, flaxseed, almond butter and maple syrup in it. All good stuff! Not a touch of white flour (of course) or white sugar — all the ingredients that are bad for EVERYONE!
Who says being Gluten Free and Vegan isn’t a good thing!!
Almond Butter Raisin Cookies (Vegan, Gluten-Free)
½ cup raisins (dark, sultana)
¼ cup oat flour
¼ cup rolled oat
1 tablespoon ground flax seeds
½ tablespoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
½ cup almond butter (roasted)
3 tablespoons water
2 tablespoons maple syrup
