Shamrock Shake

Okay, I know St. Patrick’s Day is over, but I could not resist posting this Gluten Free Vegan Shamrock Shake!  Being a big smoothie fan, this Shamrock Shake uses the same principles as the shakes or smoothies I make:   Use coconut milk, flavorings (or fruit in my case) and a good green veggie!  Seems like this recipe uses a bit much maple syrup, but if so, you can adjust to taste.

 Shamrock Shake

Shamrock Shake2 3/4 cups full-fat coconut milk, chilled

2/3 cup maple syrup (more or less, to taste)

1/4 cup fresh baby spinach (be sure to discard the stems)

1 tbsp peppermint schnapps (or 2 tsp peppermint extract)
