Socca Recipe
Every so often I run across an unusual recipe — mostly foreign based — that sounds really interesting. The following Socca Recipe is one of those recipes!
Socca is a thin chickpea (or garbanzo bean) based bread/cracker originally from France.
The author says these are very easy to make and are a great appetizer at parties. Gluten Free and Vegan as well!
How to Make Socca
1 cup (4 1/2 ounces) chickpea flour
1 cup (8 ounces) water
1 1/2 tablespoons extra-virgin olive oil, plus more for the pan
1/2 teaspoon salt
Optional seasonings: 1 tablespoon chopped fresh herbs (rosemary, thyme, oregano), 1-2 cloves minced garlic, 1/8-1/2 teaspoon spice (chili powder, cumin, smoked paprika, za’atar)
The author goes on to suggest several different ways to serve and eat Socca. If you try this recipe, please share with us how it turned out and how you served it! I would think that Socca would go great with the Garbanzo Bean and Kale Stew!
