If you’ve got a cookie craving, you’re in luck: FitSugar readers Pure2raw recently shared this glutenfree chocolate chip cookie cake with us in our Healthy Recipe group. Everyone loves cookie cake, right? We have a chocolate chip cookie cake that is

Ingredients:

  • 1 3/4 cups gluten-free flour blend (or any flour blend of your liking, gluten-free or not)
  • 1/4 cup coconut flour (or almond meal or more flour)
  • 1 1/2 teaspoons baking soda
  • 2 tablespoons flax meal with 6 tablespoons water (makes 2 flax gels, or you can use 2 eggs)
  • 2 tablespoons agave nectar or maple syrup
  • 1/4 cup sucanat sugar (or coconut sugar or xylitol)
  • 1/2 cup coconut oil
  • 1/2 cup pumpkin puree (or applesauce, yogurt, or sweet potato puree)
  • 1/2 cup chocolate chips (we use Enjoy Life chocolate chips)

Chocolate Hazelnut Mousse – Gluten Free & Vegan

What sounds better than Chocolate Hazelnut Mousse.  If you have not found a good recipe for this special day, this is it!  Of course, serve in any type glass wear you like to make it more decadent that it already is!

This is so easy but it looks like you spent hours in the kitchen and is another great excuse to make something in my favorite Weck Jars! But how do you make something creamy and Non-Dairy? Healthy Top made from almonds and cashews.

1 box Dr. Oetker – Organic Chocolate Pudding
1cup cold Unsweetened Coconut Milk – SoDelicious
1 cup Enjoy Life chocolate chips
2 cup toasted hazelnuts chopped
1 box Healthy Top by Mimiccream
3 Tbs vanilla extract
1 tsp cinnamon
2 – 4 Weck glass jars with lids

Banana Cream Chia Pudding

Chia is a very interesting seed to cook with.  The author did an excellent job of combining banana, coconut milk, chia and pudding to make this wonderful pudding.

This creamy and delicious pudding turned out way better than I ever dreamt it could, I love when that happens. This was another one of those kitchen creations that had me doing the “yum yum dance”.

Banana Cream Chia Pudding (gluten-free, vegan, sugar-free)
serves 2-4 – makes approximately 3 cups

1 cup lite coconut milk (the canned kind)Banana Cream Chia Pudding
1 cup unsweetened almond milk
2 bananas
2 teaspoons vanilla
3 medjool dates, pits removed
2 tablespoons chia seeds
