Oatmeal No Bake Cookies

Here is a new recipe for Oatmeal No Bake Cookies.  I have seen so many different variations of the same recipe …. but this one sounded unusually good with healthy ingredients such as blueberries, sunflower seeds and butter, banana chips and of course, Gluten Free Oatmeal.

Greatest Energy Bites

Oatmeal No Bake Cookies

4 cups rolled oats (we used gluten-free!)
1.5 cups raw sunflower seeds
2 teaspoons cinnamon
1 cup banana chips, crumbled
1/2 cup dried blueberries
1 cup chocolate chips
1 cup sunflower seed butter (can also use peanut or almond butter!)
1/2 cup agave nectar

Another variation to this recipe could be  …

  • Pumpkin seeds rather than sunflower seeds
  • Dates, cranberries or raisins rather than dried blueberries
  • Cashew, macadamia or walnut butter rather than sunflower seed butter
  • Coconut syrup rather than agave nectar (I’ll bet you saw that coming!!)

Of course, I would NEVER replace the chocolate chips, but you could also use a teaspoon to a tablespoon of cocoa powder if you wished a more chocolate cookie!
