Succotash

Some of the simplest dishes to fix are often the best for you.  So true for the featured recipe today:  Succotash.  A great reminder from my fellow Gluten Free Vegan blogger, Megan.

Succotash

  • 2 tablespoons olive oil
  • 1 red onion, diced
  • 2 cloves garlic, diced
  • 2 bell peppers (any color), seeded and chopped
  • 1 bunch fresh asparagus, trimmed and cut into 1″ pieces
  • 2 cups frozen corn kernels
  • 1 can lima beans, drained
  • Salt & pepper

Succotash can be made many different ways.  According to Wikipedia, it is a food dish consisting primarily of corn and lima beans.  It is wide open on how you make your Succotash based on that description.  I would think it would be a great way to serve left overs or use up odd veggies from your garden.

Personally, I would add zucchini and stewed tomatoes to my dish!
