Gluten Free Peanut Butter Cookies
Peanut Butter Cookies brings back lots of childhood memories for me. My mother made them often and let me flatten the balls of dough with a fork. I was raised in the generation of stay-at-home moms (aging myself now!), and Peanut Butter Cookies were a frequent after-school snack for me.
Unlike the cookies I grew up with, today’s featured recipe is Gluten Free Peanut Cookies.
Gluten-free vegan peanut butter cookies
Makes around 20 cookies
1/2 cup buckwheat flour
1/2 cup Doves Farm GF plain flour (or ordinary flour)
1/2 teaspoon baking powder
1 ripe banana
1/2 cup (around 130g) peanut butter1. Preheat the oven to 180C and line a baking tray with baking parchment.
2. Mix the flours and baking powder together in a bowl.
3. In a separate bowl, mash the banana well, then stir in the peanut butter until well combined.
4. Tip the flour mix into the peanut butter and banana, and stir together to form a dough.
5. Break off pieces of dough and roll into balls about 1″ across. Place on the baking tray and flatten with the back of a fork.
6. Bake for 10-12 minutes, until golden brown.
I love this recipe because it is not only Gluten Free and Vegan, but because it is sugar free! Also, I like the idea of using buckwheat flour. I personally find buckwheat a bit overwhelming in cookies, but with the peanut butter, it sounds ‘just right’!

Double Chocolate Mini Muffins
I love to find new brownie recipes, but I think I have so many now that I don’t think I will ever have time to try them all. This one sounds especially healthy — not too sweet — using natural ingredients for the sweeteners.
This recipe is adapted from a recipe from the blog Paleo Spirit, but I made these ones egg-free to fit my family’s allergies. These little treats are moist and good for any chocolate craving, but are still very healthy and sweetened with fruit! You can make these in an 8×8” pan, but the mini muffins make portion control much easier!
Double Chocolate Mini Muffins
Free of: nuts, dairy, soy, gluten, eggs
1 cup pitted dates (prunes or raisins will work too)
1 cup applesauce or 1-2 bananas
3 Tbsp. sunflower seed butter (or other nut or seed butter of choice)
3 Tbsp. coconut oil
1 Tbsp. vanilla
1/2 tsp. salt
3 Tbsp. flaxseed meal, or ground chia seed
1/2 cup coconut flour*
1/2 cup cocoa powder
1 tsp. baking soda
2 tsp. baking powder
3/4 cup strong coffee
2/3 cup chocolate chips

Vegan And Gluten-Free Banana Muffins Recipe
Love this recipe. Instead of using sugar, the recipe calls for dates and applesauce.
One suggestion I would make is to soak the dates overnight first before adding them to the rest of the ingredients. They will process much easier.
I admit it – I was skeptical. But these are yummy! They are gluten–free, and sugar free which makes them appropriate for the 21 day Quantum Wellness Cleanse.
Vegan and Gluten Free Banana Muffins
10 dates , pitted
½ cup applesauce , unsweetened
¼ cup oil , I use grape seed
3 bananas , overripe is best
1 teaspoon vanilla
1 cup rice flour
1 cup almond meal
1 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon cinnamon
½ teaspoon salt
